Comparing bread making methods with my mother, I noticed she adds yoghurt, in order to break down the phytic acid in the whole wheat flour. Having never looked much at that, I found this article among others, and it seems there could be a connection with some of Mickey Blake​'s uptake problems. I'll want to double check the (copious) references, but it's worth keeping an eye on.
